1 bag cranberries (fresh or frozen) rinsed & picked over
32 dried apricots – roughly chopped
1 ½ cups firmly packed brown sugar
2/3 Cup dried currants
4 T fresh ginger – peeled & finely minced
4 T cranberry juice cocktail (or apple juice or even water)
1½ tsp cinnamon
½ tsp cayenne pepper
- Mix all ingredients in large, heavy saucepan and heat over med-low heat until brown sugar has completely dissolved then increase heat to high and bring to boil. Boil for three minutes and remove from heat. Cool in a glass dish. Keeps several weeks.
