4-6 chicken breasts or one whole chicken
1 T crushed red pepper flakes
1 T garlic powder (or fresh garlic)
1 T paprika
1/2 T ground cloves
1/4 T ground cinnamon
1/2 T ground allspice
1/2 T ground ginger
1 T salt
2 T freshly ground pepper
2 T dried thyme
1/2 cup brown sugar
1 cup water or broth if using crockpot method
For Grill or Oven – Combine all the spices in a bowl and stir until blended. Brush chicken with a little olive oil and coat the chicken breasts in the spices. Grill or bake until done (10-15 minutes grill, 45-50 minutes oven)
For Crockpot – Combine all the spices in a bowl and stir until blended. Add water or broth to crockpot. Rub chicken with entire bowl of spices. Place Chicken in crockpot. Cover and cook until done – 3-4 hours on high or 6-8 hours on low (on low makes it super juicy!)
This tastes amazing topped with a Mango Salsa. Serve with Rice or side dish of your choice.
2 cups peeled, chopped mango
1/4 cup chopped red onion
1/4 bunch chopped fresh cilantro
juice from 1/2 lime
For a more robust salsa, you can also add chopped pineapple, jalapeno pepper and chopped green pepper.
