Turkey carcass (preferably with a lot of meat left on it)
1.5 cups brown rice
4 cups chicken broth
2 bay leaves
4-6 carrots, cut into small pieces
4-6 stalks celery, cut into small pieces
1 onion, chopped
1 tbsp. poultry seasoning
Pepper to taste
Place all ingredients in a large pot.
Simmer for 1.5-2 hours, or until meat is just beginning to fall off the bones.
Remove carcass and pull off all meat.
Throw away carcass and place turkey meat back into the pot.
Simmer for an additional 15 minutes.
